How much camera movement X3

Seems like when I have everything activated form the GO App the camera movement turning left to right is very minimal; whereas the up and down range is pretty large. Is this normal or am I missing a setting?

Normal.
In follow mode (which is what you're describing) the gimbal will try and maintain vertical axis (tilt) orientation but will move in the yaw axis with the aircraft within a small damping or buffer zone of around +/- 5 degrees.
This is called the 'Dead Zone' and is designed that way to give smoother bezier type moves.
If you require the gimbal to remain in a fixed position irrespective of how you maneuver the aircraft then you should select Free Mode.
