After charging one of my brand new TB48 batteries the 2nd or 3rd time, I was surprised to see the voltage showing 4.31V / 4,32V per cel, see attached screenshot. I always charged with one of my two DJI chargers.

What's wrong?

I just don't understand that I bought two TB48 batteries at the same time, in the same store, one battery with the normal 4.20V per cell max and one with 4.30V per cell max. I always thought that in the LiPo world, 01.V really matters. Obviously I missed something.

Any hints or further clarifications welcome.

No - 4.2 IS NOT the max of Inspire packs.
Normal Lipos will top out at 4.2v per cell however the Inspire uses the newer Li-HV packs which have a top out at 4.43v per cell. This is clearly stated in the manual (assuming you have read it) on page 20.

Stop worrying - go fly.
